Fluffy Matcha Pancakes

Ingredients:

  • cups ( g) all-purpose flour
  • tbsp sugar
  • tsp baking powder
  • tbsp culinary grade matcha powder
  • tsp salt
  • cups ( mL) milk
  • large egg
  • tbsp unsalted butter, melted, plus more for the griddle

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, matcha powder, and salt.
  2. In a separate medium bowl, whisk the milk and egg together. Pour in the melted butter and whisk again.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are okay; do not overmix.
  4. Heat a lightly buttered griddle or non-stick frying pan over medium heat.
  5. Pour about cup of batter for each pancake onto the griddle.
  6. Cook for about 2-3 minutes per side, or until bubbles appear on the surface and the underside is golden brown. Flip and cook for another 1-2 minutes.
  7. Serve warm with maple syrup, fresh fruit, and a dollop of whipped cream.
