
Fluffy Matcha Pancakes

- Yield: 8-10 pancakes
Ingredients:
- cups ( g) all-purpose flour
- tbsp sugar
- tsp baking powder
- tbsp culinary grade matcha powder
- tsp salt
- cups ( mL) milk
- large egg
- tbsp unsalted butter, melted, plus more for the griddle
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, matcha powder, and salt.
- In a separate medium bowl, whisk the milk and egg together. Pour in the melted butter and whisk again.
- Pour the wet ingredients into the dry ingredients and stir until just combined. A few lumps are okay; do not overmix.
- Heat a lightly buttered griddle or non-stick frying pan over medium heat.
- Pour about cup of batter for each pancake onto the griddle.
- Cook for about 2-3 minutes per side, or until bubbles appear on the surface and the underside is golden brown. Flip and cook for another 1-2 minutes.
- Serve warm with maple syrup, fresh fruit, and a dollop of whipped cream.
