
Matcha Coconut Energy Balls

Ingredients:
- cup ( g) rolled oats (use gluten-free if needed)
- cup ( g) unsweetened shredded coconut, plus more for rolling
- cup ( g) creamy almond butter
- cup ( mL) maple syrup or agave nectar
- tbsp ground flaxseed or chia seeds
- tsp culinary grade matcha powder
- tsp vanilla extract
- A pinch of salt
Instructions:
- In a large bowl, combine all the ingredients: oats, shredded coconut, almond butter, maple syrup, ground flaxseed, matcha powder, vanilla, and salt.
- Mix well with a sturdy spoon or spatula until a sticky, uniform dough forms. If the mixture is too dry, add a splash of water or more maple syrup. If it's too wet, add more oats.
- Place the bowl in the refrigerator to chill for about 30 minutes. This makes the dough easier to roll.
- Once chilled, roll the mixture into 1-inch balls.
- If desired, roll the finished balls in extra shredded coconut or a dusting of matcha powder.
- Store the energy balls in an airtight container in the refrigerator for up to a week.
